Dan and Mira Farm two parcels of land on Salt Spring Island and another spot on the Saanich peninsula of Vancouver Island.
Using Dry Farming Methods they stress out the vines just enough to produce some really beautiful Chardonnay and Pinot Noir. You can tell they are Dan’s favourite grapes to work with, This traditional method (Just like Champagne!) has crisp acidity, beautifully dry, balanced richness with notes of Spiced Lemon & Brioche.
In order to create this balance the wine is a blend of 70% Chardonnay grown in 2016 with 30% North Saanich grown Pinot Noir from 2017.
For the wine nerds out there, the Tirge date is December 30, 2020, it was a spontaneous Neutral Barrel Ferment with Zero Dosage.
