Kutatas Blanc de Noir
Dan and Mira Farm two parcels of land on Salt Spring Island and another spot on the Saanich peninsula of Vancouver Island.
They Dry Farm (no Irrigation!) the Pinot Noir to produce complex fruit and gently press the grapes. The juice from first half of the pressing is separated to make this white wine (from a red grape) allowing it to have crisp acid with lots of body and texture.
The Grapes will continue to be pressed with more skin contact to make the second half of the pressing into their Pinot Noir Rose. No juice wasted here!
This wine is a first press fraction, spontaneous ferment in neutral barrels & 8 months lees aged. With Flavor profiles of creaminess, pear & subtle spice.
